Pesto chicken Panini

Hello people here I am, back again with a super-duper easy dinner/lunch/brunch recipe ,the “Pesto chicken panini”  sandwich. Sandwich is a “sandwich” but panini is an awesomeeeeeeeeee sandwich. Do you agree??? Normally when we make panini the types of bread we use are ciabatta, rosetta and baguette. The bread is cut horizontally and filled with ingredients such as salami, ham, cheese, or other stuff, and often served warm after having been pressed by a warming grill. There is widespread availability and use of sandwich presses, often known as “panini presses” . I am sad 😦 because I do not have a panini press but “pas de probleme ” I am going to use my grill skillet and make these yummylicious ,super easy & fast food. And I am going to use Naan to make the Panini today. Few days back we went on brunch to one of my favorite  brunch place in town called ” Ben & Florentine” and I ordered this dish, ironically while eating I chewed something hard and it was a small piece of Glass ,Holy cow I was so upset and left the food, paid the bill and came back. I was very upset as they didn’t even asked for apology. I decided to recreate the recipe and VOILA I did it. So I thought I should share this easy recipe for all busy people out there.

  • 2 Naan ( store bought ,whole wheat, plain naan ,choice is your’s)
  • 1 medium sized tomato chopped
  • 1 tablespoon olive
  • 1 tablespoon Mayo
  • 2 tablespoon Pesto sauce
  • 1 chicken breast ( cut horizontally into 2 pieces)
  • 1 tspn red chilly powder or cayenne powder
  • 1/4 tspn garlic powder
  • 1/4 tspn black pepper
  • 1 tspn lemon juice
  • Salt to taste
  • Mozzarella cheese
  • 2 tbsp Olive oil


  • Clean the chicken pieces,pat dry with a paper towel  and marinate the pieces with any choice of your herb. Starting from only salt,pepper,lemon juice  & olive oil to adding garlic powder,onion powder ,cajun powder etc etc etc.
  • To be precise I marinated with salt,pepper,lemon juice ,olive oil & garlic powder.Kept for 5 min .
  • In a preheated oven to 400 C ,grill the chicken for 25 min . Changing sides in between.
  • Once the chicken is cool,chop into small pieces.keep aside.
  • Now mix the mayo & pesto and make a smooth paste.
  • Now the assemble part.
  • Apply the mayo+pesto mix in the naan as shown below.


  • Put the chicken pieces all over the naan followed by tomatoes,olives and grate some mozzarella cheese .
  • Sprinkle pepper all over.


  • Cover the top sandwich with the other naan.
  • Now heat the grill skillet , brush with some olive oil and put the sandwich on it.
  • For people who doesn’t eat chicken can use paneer or tofu,just saute it in little oil and you are ready to go.


  • Now press the sandwich with a spoon or your palm as the top layer is till cold. This gives a beautiful brown lines on the naan,like panini press.
  • Turn the side after 2-3 min and cook pressing with a spatula till the cheese start melting.


  • Cut into 4 pieces and enjoy with salad of your choice.Ting !!!!
