Litti Chokha

Litti is a snack food mainly from the state of Bihar & Jharkhand in India. it consists of wheat and sattu (powdered gram or lentil) formed into balls with spices and then dipped in ghee (clarified butter) . Do not  get confused with the closely related Baati becos batti is a completely different dish in terms of taste, texture and preparation. You can eat Litti with yogurt, baigan bharta, aloo chokha, tomato chutney, green chutney and lehsun chutney. The litti is traditionally baked over a cow-dung fire but in the modern day we either bake or deep fry it.



For the Filling (Sattu masala)

  • 1 cup Sattu
  • 1/2 tspn red chilly powder
  • 1 tspn grated ginger
  • 1 tspn grated garlic or chopped into small pieces
  • 2-3 green chilly finely chopped
  • 1 medium size onion finely chopped
  • 1/2 tspn Ajwain (caraway)
  • 1/2 tspn saunf (fennel seeds)
  • 1/2 tspn kala jeera
  • salt to taste
  • 1 tablespoon Mustard oil
  • 1 tablespoon any pickle masala
  • little chopped coriander
  • In case if you dont have the pickle masala
  • Use 1 tspn Aamchur powder
  • 1/2 tspn Lemon Juice
  • For the dough to make litti
  • 2 cup wheat flour ( this will yield 10 small size Litti)
  • 2 tablespoon puree ghee ,
  • 1 tspn Ajwain
  • Little Salt as we already have salt in sattu masala so be careful
  • 1/2 cup yougurt
  • Warm water to make dough
  • For Tamatar Chutney
  • 2-3 tomatoes
  • 2 green chilly chopped
  • 1/2 chopped onion (small pieces)
  • 1/4 tspn grated ginger & garlic
  • Salt to taste
  • Some chopped coriander
  • 1/2 tspn Mustard oil
  • For Aloo Choka
  • Boiled Potatoes
  • Half onion chopped into small pieces
  • 1-2 green chilly finely chopped
  • Salt to taste
  • 1/2 tspn Mustard oil
  • 1 tablespoon Tamatar Chutney


  • For the Filling (Sattu masala)
  • Mix all the sattu masala ingredients and keep aside. Taste to check the salt and khatai .
  • For the dough to make litti
  • Mix all the ingredients and make dough like how you make for chapati using warm water .
  • Preheat the oven to 350 °F (180 °C).
  • Make medium sized pieces from the dough. With the help of your fingers expand the pieces 2-3 inches in diameter. Place 1- 1 1/2 tsp sattu masala and close from all sides.
  • Place all the litti in a baking tray and bake for 10 minutes, then lower the oven temperature and bake another 20-25 minutes, till brown and cooked through.
  • For Tamatar Chutney
  • Wash the tomatoes & wipe with a cloth, put some oil on the tomato skin.
  • Keep the tomatoes in the baking tray and bake it at 350 C for 15-20 min in a preheated oven.
  • Once the tomatoes are cool ,remove the skin and mash it will a fork.
  • Add onion,chilly,coriander,salt,oil.

  • For Aloo Choka
  • Mash the boiled potatoes and mix with onion,salt,chilly,mustard oil and one tablespoon of the tamatar chutney you made.

How to serve ?

  • In a pan heat clarified butter or ghee.Put the baked litti’s in the pan and make sure the ghee is all over the litti with a spoon , heat for a while.Serve with tomato chutney &  Aloo chokha. Ting !!!
