Egg Bhurji

This egg bhurji is my favourite as it has lots of tomatoes and its quick & fast to make . I love it with plain parathas.You can eat this with bread or chapati as well.


  • 2 eggs
  • 2-3 medium size tomatoes
  • 1/2 onion chopped
  • 2-3 garlic finely chopped
  • 1/2 inch ginger grated
  • 1/2 tspn turmeric powder
  • salt to taste
  • 1/2 tspn coriander powder
  • 1/2 tspn chilly powder
  • Coriander to garnish
  • 2 tbsn oil


  1. In a pan heat oil and add ginger,garlic fry till brown.
  2. Add onion and fry till onions are translucent then add tomatoes and all spices.
  3. Cover the pan and fry till tadka leaves oil.Add the eggs and fry nicely.
  4. Garnish with coriander and serve. Ting !! 🙂
